II. History of the 70-year-old coffee

Giang cafe with its long story stood out as a Hanoi specialty . It was named after the founder of the coffee shop – Mr. Nguyen Van Giang. The traditional coffee came up with many different kinds of taste but the egg coffee (or “ca phe trung” in Vietnamese) is the star. Egg coffee at Giang cafe is told to be the finest of its kind and a must when you visit Hanoi.

In the past, Mr. Giang was working as a bartender at the Sofitel Legend Metropole Hanoi Hotel. Due to the shortage of needed ingredients in the 1930s, the egg coffee was an improvisation from cappuccino’s recipe. Mr. Giang has come up with the idea of using the egg to replace the pricey fresh milk at that time and that’s how the iconic drink was born. In 1946, Mr. Giang decided to quit his job at the hotel to launch his own brand which grew as a family business since then. 

III. The recipe and serving

As 70 years go by in Hanoi history and Giang cafe itself was relocated twice but the taste is almost unchanged from its original recipe.

The drink can be served hot or cold, but the first one is highly recommended and more popular than all the other offers on the menu. The coffee is roasted, ground and carefully filtered before being brewed in a small cup. What makes the Vietnamese egg coffee Vietnam is the drip filter. The liquid then will be mixed with whipped and foamy egg yolk and other ingredients. Once the former step is done, the beverage will come up with a small spoon and be served in a bowl of hot water to retain the necessary heat. The size of the cup is intended to fit your hand. The texture is rich and bold so it is more suitable to sit and chat with friends while slowly stirring the cup, just like the slogan “Hà Nội không vội được đâu!”.

The golden brown top layer of the drink – the thoroughly-whisked egg is surprisingly thick, soft and creamy. You can see the strong coffee at the bottom of the cup. The cold version is loaded with ice and it tastes more like a dessert than a regular milk coffee. It is different from all the bland, skinny latte and overheated coffee beans of the other international coffee brand. At first, one might doubt its taste but just one sip and it will blow your mind away. No one can imagine the weird combination of egg and coffee would form this perfection.

Although Giang cafe is quite humble in a small lane at the city’s old quarter, it’s always crowded with both the locals and the foreigners at different ages. The coffee shop is a vintage and cozy place colored with a thousand years of civilization of Hanoi.

Nowadays, coffee became a culture, an important part of the Vietnamese people’s life. They say, if you’ve never tried an egg coffee, you’ve never been to Hanoi.

Egg coffee is served everywhere with basic ingredients such as egg yolk, condensed milk, butter, Vietnamese coffee powder, and a little cheese. However, the secret lies in the techniques of the bartender that made Giang coffee the best destination for this kind of drink. Other coffee shops tried to initiate the drink but none of those can beat the delightful authentic version. 

Mr. Nguyen Tri Hoa – son of Mr. Giang affirmed that the key is nothing but the quality. The process is not as easy as it sounds. The fresh chicken eggs are selectively prepared to avoid the fishiness. The coffee powder must be the pure premium one for the striking scent. The recipe might simple but it requires sophistication and skill. The measure of a fixed proportion of each ingredient is necessary to harmonize the bittersweetness. 

The well-known egg coffee has been on CNN and The Guardian for its unique taste as one of the most stunning specialties of Hanoi . It was also selected to serve over 3,000 cups during the US – DPRK summit 2019 in Vietnam.

VI. Some tips

Since Mr. Giang’s son took on his father’s career, many different tastes were introduced such as egg chocolate, egg matcha, egg rum or even egg beer in addition to the original one. It offers you more options when you crave for something new. 

The coffee shop is quite small so you must pay attention to the sign hanging above the alley. Once you saw the sign, you will meet the famous Giang cafe at the end of the lane.

You can book a taxi or drive yourself here. You have to park your vehicles at the opposite of Giang cafe, which is 10 meters away. It costs 10.000 VND per time. 

The best time of the day to have for a cup of coffee is in the morning, right after your breakfast. Furthermore, you should avoid coming at the peak time for your favorite seats. 

Still, it’s always a good time for a coffee. The store offers the visitors a warm-hearted atmosphere to talk, a place to drink and a coffee to remember. Whether it is a rainy summer day or a cold winter night, you could easily treat yourself with a proper drink at Giang cafe.

The “Café Giảng” is one of the most famous traditional coffee shops in Hanoi, located on the east side of the  Old Quarter . Opened since 1946, the café was named after its founder – Mr. Nguyễn Giảng – a bartender at a colonial hotel in the  French Quarter .

Tucked away behind a small lane, through what looks like someone’s house and could be easily missed, on the bustle of Nguyen Huu Huan Street. This hidden gem draws endless lines of locals and tourists to taste the original “cà phê trứng”, or egg coffee.

Though  coffee shops across the city  now serve  egg coffee , Café Giảng claimed to have invented the drink. Nguyễn Chí Hoà, the current owner of Café Giảng, revealed that when the resistance against the French kicked off the first Indochina War in the late 1946, his father got no choice but to relinquish his job at Sofitel Legend Metropole Hanoi Hotel and opened a café at home.

To enjoy the strong and bitter French-press Robusta coffee, both coffee makers and local drinkers in Vietnam rely on a steady stream of sweeten condensed milk to balance it out – the trick that make Vietnamese coffee today. But what happens when the milk runs out? 

Shortly after opening his own café, Giảng faced the question when a milk shortage was caused by the war. With a clever hack whisking in egg yolk as a much-needed substitute for dairy product, surprisingly, he created a frothy cup of egg coffee resembling a liquefied tiramisu!

Hoà reafirmed his father’s egg coffee recipe remains the same today: raw chicken egg yolk,  Vietnamese Robusta coffee , sweetened condensed milk, butter, and cow cheese. The coffee is firstly brewed in a cup before adding the well-whisked mixture of those simple ingredients.

What a story to tell!

After three hours walking around the Old Quarter on our  Hanoi food tour , eating heaps of different  street food , we walked into Café Giảng to try its legendary egg coffee. It was quiet when we were stepping in, and the long hallway that we walked through did not depict what we would find inside.

But when Uncle Hoà, sitting at the door of the kitchen keeping track of orders, told us to head upstairs – that was where the noise and crowd were. We found the only empty table and sit down. There are menu and wifi password on the wall. They serve coffee, types of tea, yogurt, juices and sunflower seeds, but no food. 

The egg part on the menu features about a donzen of drinks related to egg, including egg ice cream and egg beer. With a philosophy to try as much local produce as we can, we ordered fourdifferent drinks: Egg Coffee, Egg Matcha, Egg Cacao, and Green Bean.

Our hot-version egg coffee, came resting in a small dish of hot water to maintain its temperature, was the best of the four. It was frothy, rich, sweet, and tasted almost like a coffee flavored tiramisu – our customer concluded it was more like a dessert than coffee. 

The egg matcha had too strong green tea flavor, which muted all other taste, plus no matter how much one stirred, the matcha gets lumpy. Green bean did not provide any kick or outstanding flavor. The egg cacao was kind of over sweet. All the four drinks cost 125.000 dong; nearly $6 US.

Though the café was so busy, the service was quick. When our drinks came, the friendly waiter gave us a number, we hold on to it and paid for the drink down stair. The owner farewelled his customers with a grateful smile.

Inside Cafe Giang

For the vast majority of our customers over the years, the egg coffee experience is a revelation. The wow factor is high. When we start describing it, they can’t put two and two together. “Egg” and “coffee”, together? It’s pretty hard to get a coherent image of those two ingredients in a cup together. It’s always fun.

We’ve never had a customer not like it. Most devour it and swear they’re coming back for one every day they’re in Hanoi. Even travelers who are not normally coffee drinkers at home can be surprised.

Before heading to Café Giảng for the  original egg coffee  yourself, note that the place has a bit uncomfortable tables and very low chairs – traditional little stools very close to the ground, which, of cause, is part of the experience. At some points of the day, it’s so busy with groups of locals and tourists that it could be difficult to find a spot to sit down. Also, their bathroom is not supper clean.

Despite the crowd, we had a pleasant coffee experience. Thus, we gave Café Giảng 4 star for offering delicious egg coffee, maintaining traditional home-based coffee atmosphere, and having helpful staffs. Highly recommend going to this family-run egg coffee shop for your first egg coffee ever.

Cafe Giang – The Original Creator of the Famous Egg Coffee in Hanoi

After having a cuppa at Highlands Coffee , a popular Vietnamese cafe chain, I was even more determined to hunt down a specialty cafe that offers more than just run-of-the-mill coffee.

I got to know about Cafe Giang when I was looking for places that serve up the famous ca phe trung or egg coffee which is a must-drink beverage in Hanoi. The cafe was founded in 1946 by Mr Nguyen Giang (hence the name) who is said to be the godfather of egg coffee in Vietnam. Their recipe has not been changed at all and their egg coffee today is still made the same way as it was during its early days.

It is easy to miss Cafe Giang as it’s hidden in a nondescript alleyway off Nguyen Huu Huan in the Old Quarter.

Just a little bit more further in and you should see the counter/kitchen and a staircase. Go up the stairs where there’s better ventilated seating space.

Packed with locals and tourists alike. There was a constant flow of tourists on street food tours.

This is the menu that’s available on every table (either stuck on the table itself or on the wall) with English description on the right column for easy ordering.

By the way, there’s also free wifi here (password is provided next to the table).

We ordered a hot Egg Coffee (30,000 VND) that came with hot water in the saucer below for keeping warm. Apparently, this egg coffee was made by mixing a blend of chicken egg yolk, condensed milk, butter and cheese with freshly brewed Vietnamese coffee. Could also hear the sounds of blending machines from downstairs.

Mr Nguyen Giang had developed the recipe during a time when milk was scarce in Vietnam so he substituted with egg yolks instead.

This was a sweet coffee with a creamy topping. It wasn’t very eggy and in fact, we could still taste the aroma of coffee in it. It was more like a dessert than a coffee drink and it did remind me of a tiramisu in a cup. Yummy.

We also ordered their new Egg Matcha (35,000 VND). It was like a green tea latte with the same creamy topping as the Egg Coffee. The deep aromatic flavour of the matcha really stood out. Nothing artificial or fake – it was all real matcha powder.

I really have to try making this at home since we can’t get egg coffee in Singapore. Hopefully it doesn’t take me too long to nail it, lol. And if I’m happy with the recipe, I’ll definitely share it with you all. 🙂 Fingers crossed!

Well, Cafe Giang had seamlessly combined both coffee and dessert in a cup. That definitely brought coffee drinking and sweet treat enjoyment to a whole new level. An ingenious invention that pleases the palates of many . Definitely a must try.??

Those who have spent any time in Hanoi know that the best joints in town are hidden hideaways, those that barely beg attention at first glance. And so it is with Café Giang , one of the cities ‘four pillars of coffee,’ legacy coffee-houses (see also, cafes Nhan, Nhi and Di), which almost seem to define the drinking culture of the city itself, which is surely Asia’s coffee capital.

Café Giang is not Hanoi’s oldest coffee-house, yet it has still been open since 1946 and in some ways is part of very fabric of the capital’s history. The entrance is wedged between two standard-sized shops, and you have to nip down a back alley with just enough space to enter in single file. It’s in these humble confines that we meet proprietor and coffee expert Nguyen Van Dao, with his soft eyes, gentle demeanor and faintest wisp of a beard, he welcomes us with a grandfatherly smile and ushers us upstairs to his aged coffee-lair.

Come up, come up,” he says. ‘“Up here is much more relaxing.” And so it is. There’s a surprisingly spacious seating area and even a mini open-terrace, where you can make out the faint hustle-and-bustle of the city below.

“The Vietnamese don’t like their coffee black, so my father took a leap of faith and decided to put egg yolk into the drink.”

Dao is no spring chicken. In fact, he is as old as the coffeehouse itself. Though he didn’t join the family business until his 30s, as he had a previous career as a marine engineer. Sitting down over mugs of piping hot coffee, his eyes brighten as he starts to talk about the café and its storied history. The old man suddenly seems like a young boy, beaming in quiet unadulterated joy. It’s his café’s family that created one of Hanoi’s most famous beverages, a drink that can be found in few other places in the world: egg coffee. And he delights in telling us of its origins.

“The year was 1946 and it was a time of ongoing warfare and rampant famine in Northern Vietnam. Finding milk – let alone being able to afford it – was an impossible feat!” Dao tells Chào . “Even for my father, Giang.”

Dao’s father Nguyen Van Giang was something of a minor celebrity in his day, an esteemed bartender working at the iconic Sofitel Legend Metropole Hotel, visited by such luminaries as Graham Greene and Charlie Chaplin.

“The Vietnamese don’t like their coffee black, so my father took a leap of faith and decided to put egg yolk into the drink,” Dao says. “This was a radical idea! It was an immediate hit, and the people loved it.” The egg concoction became so popular that it quickly surpassed the much-beloved Vietnamese iced-coffee, and thus, their family café was born.

 “It was like guerrilla warfare, you know,” Dao chuckles. “We kept opening and then closing. If it felt like the authorities weren’t in support, we’d hit pause on our café to align with the wartime’s priorities.”

Dao’s excitement at the drink his father popularized is so intense that Chào’ feels compelled to order a round, and we quickly do so. As we take our first sip, any doubts about the seemingly incompatible combination vanishes. Dipped in a small bowl of warm water to sustain its heat, the scent steaming from the cup of hot golden goodness is heavenly. The flavor is sweet enough to fool you into thinking it’s a dessert, that is, until the strong distinctly Vietnamese caffeine kicks in with a bang. We stay silent for a while, simply sipping on warming drink, enjoying the moment for what it is. Drinking coffee as it should be drank. Despite the surging popularity of Café Giang’s brews throughout the 20th century, business was not always smooth. Any crash course in Vietnam’s turbulent history shows why. From France’s colonization leading to the First Indochina War (1946-1954) through to the infamous Vietnam War (known as the American War), conditions were rarely ideal for a humble café to operate.

Yet with so many years passed, Dao looks back on the turmoil with, well, not quite fondness, but good humor at least. And he relishes talking about the cat-and-mouse game they had to play with authorities, not to mention avoiding the ever falling bombs. “It was like guerrilla warfare, you know,” Dao chuckles. “We kept opening and then closing. Naturally, coffee is Dao’s great obsession and he talks about it at length, going into the details of the technique to make it, where to source it, and what makes a good cup. The beverage has been an inspiration to all those close to him.

“This little beverage has nourished and fostered my entire extended family,” he says. “It’s my only job now, day after day, but it has never once bored me.”

When asked the secret as to what has given his drink such an excellent reputation, Dao insists it is all about the quality and the fact he used a mix blend of unique beans. “I use Liberia for its richness, Arabica for its fragrance, Robusta for its intensity. They have distinct profiles.” To coffee aficionados like Dao, the differences are obvious and just jump out. To laymen likeus, it just tastes like superb coffee. But Dao is animated and wants to talk egg coffee again and the its effect on all those who try it. He claims it has powers to charm pretty much everyone and anyone on the planet, even the choosiest of coffee drinkers.

“I’ve had customers, both local and from abroad, come in and say this is the best drink they’ve ever had. Some have even say, ‘if you travel to Hanoi and never try the egg coffee, have you even been there at all?” he says beaming. “When I first heard that, it stopped me dead in my tracks. There is something in the quality of the drink, I suppose, to make them say such a thing.”

Aside from coffee, of which Dao can seemingly talk about for eternity, the city of Hanoi is his second great love, and he is quick to tell us that he is a “child of Hanoi,” and has resided here his whole life. He couldn’t conceive of living anywhere else. After all, he is part of the city’s history. Indeed, many of the best stories in the city are not to be heard but tasted.

For as long as coffee has reigned supreme in the capital, Dao and Café Giang have been along for the ride, witnessing the city’s ups and downs over a warming cup of the black stuff, with rum, egg or without. It’s already been around 75 years, and we wouldn’t bet against it being here 75 more.

Remember when I attempted to  make Vietnamese egg coffee at home ? Back then, I was obsessing about egg coffee, and I wanted to know if I could DIY it at home; it turns out I could. While I loved my concoction, I knew it wouldn’t hold a candle to the original. Cafe Giang in Hanoi is the first coffee shop that introduced this unique and lovely coffee drink to the masses, and now many businesses have followed suit. And because this is Coffeehan, where I share with you all of the best (ok, also, the not-so-best) coffee shops, I knew I had to go to Hanoi and visit Cafe Giang in person.

And guess what guys? Your girl is finally here! I just arrived in Hanoi, Vietnam, early today, and while waiting for my hostel’s check-in time, here I am at Cafe Giang, writing and overdosing on egg-laced drinks.

I’m so excited to share this review; I’m writing this while I’m still at the coffee shop. I’m running under an hour’s worth of sleep on the plane; I don’t know how I’m still alive. My flight was too early, so I left the house a quarter before 11:00 pm last night. Anyway, enough preamble, and let’s get down to business.

Cafe Giang, Hoan Kiem, Hanoi, Vietnam - facade

Cafe Giang is located in Hoan Kiem, along P. Nguyễn Huru Huấn street. This street is lined with numerous establishments like coffee shops and restaurants. Cafe Giang is easy to find, I just followed Google Maps, and before I knew it, I was already here.

You can see the sign outside and then walk through the narrow aisle to get inside the coffee shop.

Cafe Giang has been around since 1946. I don’t know if this is the original location, but the building is old and has a vintage vibe. There are a few seats on the ground floor, and on the far side of the room is the kitchen, where you can see staff walking to and fro, making and delivering coffee to the customers.

There are more tables upstairs. There are three different rooms with tiny, low tables and small stool chairs (or what we call in Filipino “bangkito”). Each room flows into another, separated by arch entryways. There are no fancy decorations, just a few photographs and paintings on the wall.

There are many coffee shops along the street, but I noticed they were less busy than Cafe Giang. Here, people come and go, most ordering more than one cup of coffee.

Cafe Giang has a free high-speed WiFi connection. I noticed, though, that it gets disconnected every so often then the login screen would pop up. I didn’t mind because I could reconnect quickly with no problem.

I ordered a cup of hot egg coffee served in a small cup. Okay, the moment of truth, how was the egg coffee? Did it live up to the hype? Was it overhyped? My verdict, their cafe trung is absolutely spectacular.

I stirred the mixture until well combined; the creamy topping was thick. I couldn’t make my egg coffee like this; I was way over my head for even thinking I did great.

It was sweet but contrasted nicely with the crisp, bitter flavor of the coffee. It was so  bitin  (can’t get enough of it) that I almost ordered a second cup.

I did order another cup, but I tried a different flavor; the matcha trung (egg matcha). Just like the egg coffee, it didn’t disappoint. I liked the grainy texture of the matcha powder and how the leafy taste balances well with the fluffy egg and milk mixture. I loved it, but not as much as Vietnamese egg coffee.

Vietnamese Egg Coffee (Ca phe trung)

Coffee lovers you need to try this! I know it sounds strange but imagine your latte made with a strong espresso and 1 egg yolk beaten with sweetened condensed milk to a light fluffy crema like topping sitting on top. Shortly after my daughter moved to Vietnam, she began raving about the food. We raised her a foodie, obviously. No street eat was too questionable, no dish too exotic. But, the one thing she really went on about was Vietnamese egg coffee (ca phe trung  or   cà phê trứng ). When she fist told me about it, I had to pause for a moment and think about the word combination. Egg + coffee=Hmm... I must admit that the mental image was not pleasant.

My first thought was: scrambled eggs in coffee? I really didn't know what to think. She swore it was like nothing else I had ever tasted. She sent us a photo and recipe to explain this mysterious beverage.

Vietnamese egg coffee is a real treat

Vietnamese egg coffee (ca phe trung) is made by beating an egg yolk with sweetened condensed milk for about 10 minutes until it makes an airy, creamy, meringue-like fluff.  Are you drooling yet? This eggy goodness is then slowly poured on top of hot espresso, or iced coffee. Are you with me so far?

So, when my family and I traveled to Vietnam last Christmas to visit my daughter, she hooked us up with a street food tour given by her friend Thanh who owns a tour company called Maia Travel .  My daughter now helps her with tours and is part of the team.  Here is Thanh and the team.

If you are traveling to Hanoi this is a must-do tour and you are in for a great experience.

On the food itinerary was none other than egg coffee. WOW, what a surprise. It was absolutely delicious.

The egg cream on top of the coffee was rich and silky, but not overly sweet. The Vietnamese espresso underneath was strong enough to color my hair AND keep me up for days, but perfectly offset by the creamy sweet foam on top. Yes, this is definitely dessert coffee.So, then, how did such a lovely treat come to be? Well, my daughter's friend, Thanh, who gave our street food tour, told us the story:

A curious history

Egg coffee first hatched (pun intended) in 1946 in Hanoi, Vietnam. An individual by the name of Giang worked at the Metropole Hotel as a bartender. During this time, it was unusual for locals to work for foreign companies, but Giang was a real go-getter. He was passionate and very talented in his pursuits; so when a milk shortage struck Vietnam, he figured out that creamy egg yolks and sugar would make a perfect substitute.

Giang then started making the curious concoction for hotel guests and they LOVED it! Soon, word got around of his talent, and he left his job at the Metropole to open a small coffee shop serving his now famous Vietnamese egg coffee ( ca phe trung ).

Generations of Hanoians have come to know and love his little family-run coffee shop. Other baristas in town attempted to copy his creation, but nobody did it quite like him. Giang had three sons and one daughter who carried on his brainchild and now owns three cafes in Hanoi that serve the ORIGINAL Vietnamese egg coffee (ca phe trung).

When you taste Vietnamese egg coffee ( ca phe trung ), not only will your taste buds dance with joy, you will now be a part of an old  Hanoi tradition. Creamy, sweet egg fluff atop rich coffee, you won't forget it.

There are two other delicious Vietnamese coffee drinks that I recommend:  Ca Phe Sua Da or Vietnamese Iced Coffee is iced espresso with sweetened condensed milk and Vietnamese Coconut Coffee is espresso served hot or cold with coconut cream. You really cannot go wrong with either of them! 

By the way, if you are ever in Hanoi and want the real deal, there are three Cafe Giang locations to check out:

  • 109 Yen Phu
  • 39 Nguyen Huu Huan
  • 13 Dinh Tien Hoang

Here are the visual steps to make Vietnamese egg coffee:

  • Gather all your ingredients and brew 12 ounces of strong espresso style coffee. This is enough for 2 servings.
  • Add the egg yolk and sweetened condensed milk to a pitcher and whip with a hand blender.
  • Continue whipping until you have soft peaks and the volume will more than double.
  • Add the espresso to the 2 cups of coffee and then spoon on the whipped egg mixture over the top. Enjoy!

Chả Giò or Vietnamese Fried Spring Rolls are a delicious side or a light meal. My version is vegetarian but feel free to add pork!  Vietnamese Pho Tron is a cold and VERY flavorful beef salad that is served during the hotter months. Bun Cha is a grilled pork meatball that is out of this world and it includes the traditional dipping sauce recipe also. Thit Kho Tau are slow braised pork medallions in a coconut sauce that you have to try. Bo Sot Vang (bò sốt vang) is a delicious beef stew you can make in a slow cooker that has very unique flavors and is served with a crusty bread like French baguette or bahn mi.

Cá Sốt Cà Chua is Vietnamese Tomato Fish with Dill. You will love how the sweetness of tomatoes goes perfectly with the tangy shallots and aromatic fill.

  • 12 oz espresso
  • 1 egg yolk
  • 4 tbsp sweetened condensed milk

Instructions

  • Brew 2 cups of espresso
  • Whip the egg yolk and sweetened condensed milk until light frothy or soft peaks.
  • Add egg mixture on top of the espresso.

Thanks for the tip Jill. We're headed to Hanoi in 2018 to spend Christmas with our daughter. I will certainly try it there. One of the things I love most about Hanoi is the coffee culture. Our daughter took us to so many quaint coffee shops during our stay.

4 TABLESPOONS of sweetened condensed milk?!? Really? That's 1/4 cup, about 6 times as much as any other recipe I found.

Please confirm. Did you mean 4 teaspoons, perhaps?

Hi Moe, The egg coffee is quite sweet and you need enough volume of egg yolk and condensed milk to whip into a nice meringue. I adjusted to 2 cups of espresso with the same amount of egg and condensed milk to make the meringue. Feel free to add as much on the top of your cup as you want. Enjoy!

Be sure you have a really fresh egg. The whipping time would typically be about 10 minutes on high, sometimes less depending on the speed and type of blender.

Um yeah. Do you mean "middle coffee" or "egg coffee?" Because "trung" means "middle" in Vietnamese. The translation of "egg" to Vietnamese is "trứng".

I accidently came across an egg coffee in Hanoi last week on my last night in Vietnam. The vision in my head of this coffee was not pretty but I thought I could always not drink it. I had no idea what I was getting. I thought they had forgotten me as it took so long to make but when it finally arrived WOW. I have not stopped going on about it since. Hence finding this website.I am now going to try to make my own in Australia with my little Vietnamese coffee brewer and coffee grounds I brought back with me.

We will be in Hanoi in a couple months to kick off a lengthy Vietnam/Cambodia tour. We plan on going on a popular evening food tour in Hanoi on our first night. The egg coffee is featured, and reviewers have raved about it. I’m embarrassed to ask, but is a decaf variation available? Should I even ask? My system absolutely can’t handle anything caffeinated after noontime. I would be up all night if I had any regular coffee in the evening. Should I just politely pass or ask for a decaf? Would I even actually get a decaf if I asked? Thanks for your thoughts..,

Hi, I checked with my daughter who lived in Hanoi for 4 years and she said there is very little chance to get a decaf egg coffee. She said you may be able to have them serve you a mung bean drink with the same egg meringue on top. Enjoy!

Hi...we just returned from Vietnam and Cambodia with our children over the Holiday break. Someone was asking me to explain “Egg Coffee” and I came across this blog...excellent review! We stayed at the hotel of the originator and they add cognac...yum! To answer this question above, as we had two non coffee drinking children with us...one shop did it with chocolate, and when they didn’t have chocolate the children just ate the egg cream on its own sans coffee. Hope this helps!

In Hanoi, I found this back alley cafe named HN Time and tried egg coffee for the first time. Delicious! It was creamy and pairs well with the bitter espresso at the bottom. Cannot forget it! I also tried their Coconut coffee which was also delicious. 😄

I just got back...was in Hanoi on February 14, 2023 and a bit hesitant to try it as I am not a coffee person and the combination did not paint a pretty picture in my mind but our tour guide and my husband convinced me to try it. We tasted it at 39 Nguyen Hou Haun and was pleasantly surprised. So I had it original style but the barista put a twist on it for my husband and added rum. Omg . It was delicious 😋.. anyone traveling should try it . Nice way to end a Valentine's day!!

Cafe Giang was opened by my father, Mr. Nguyen Van Giang, in 1946, when he was working as a bartender for the 5-star Metropole Hanoi hotel. Although it has gone through two changes of location, Giang’s egg coffee recipe has remained almost unchanged from the early days of more than 70 years ago, with the main ingredients being egg yolk, flour, Vietnamese ground coffee, sugar, and esoteric spices… After being carefully filtered and brewed, hot coffee is poured into a cup of golden egg cream. The tasty egg cream, prepared according to the Giang’s recipe and mixing secrets, remains the unique specialty of Cafe Giang until today. The egg coffee cup is then placed in a bowl of hot water to keep warm during the winter and up until now, whether it’s winter or a hot summer, the image of a cup placed inside a small bowl has been imprinted in the customers’ minds when it comes to Cafe Giang.

My father, Mr. Nguyen Van Giang recalled the birth of egg coffee as an aspiration and the creativity of a Vietnamese person during difficult circumstances. Those were the years when Vietnam was falling on hard times with lots of difficulties, but my father, a bartender, still fought his way to create a drink for Vietnamese people. What’s more significant? The egg coffee is a product that harmoniously combines what’s best in Europe and Asia, with the eggs replacing the milk, the signature coffee beans that come from thousands of mountains and forests, and the effort of all diligent Vietnamese people who have been preserving it for more than 70 years. Recipe for Vietnamese Egg Coffee, Sampled in Hanoi

Egg Coffee Hanoi

After so many years of wandering for food , visits back to Canada involve new recipes and my attempts at recreating dishes I loved and experienced abroad. While my family is usually thrilled to be my guinea pig, they were wary of the recipe I brought home in 2013: Vietnamese egg coffee (cà phê trứng), a drink that I first tasted in Hanoi.

For those staying at home these days, trying new things in the kitchen is a welcome respite from the onslaught of news. You may have heard of dalgona coffee , a whipped coffee first popularized in a South Korean movie, and named after a honeycomb treat of the same name. To my tastebuds, egg coffee is so much tastier.

Previously, I read of putting eggs in coffee before, mostly from Scandinavian countries where it was used to clarify the brew and generate an amber-coloured cup of coffee with a milder taste.  Says Martin Lersch in his post about Norwegian egg coffee :

The addition of proteins while preparing the coffee serves two purposes: 1) it helps the coffee grounds to flocculate, allowing them to sink faster to the bottom of the pot (this effect is probably more pronounced when using eggs) and 2) the proteins bind irreversibly to astringent and bitter tasting polyphenols in coffee to form insoluble complexes that will precipitate. The end result is a clearer coffee with a pleasant and mild taste. The bitterness is only barely noticeable, but the coffee still has enough “body” so it doesn’t feel too thin!

It’s not only Norway, either. Sweden also serves this egg-filled treat. Per I Need Coffee’s Swedish Coffee recipe : “Swedish egg coffee is dead simple to make and the result is a non-bitter, surprisingly light and incredibly smooth cup that combines the wonderful flavor of your favorite roast with a reminiscent aftertaste of toasted cheese (trust me, it sounds strange but it works).”

In contrast, Vietnamese egg coffee ( Cà Phê Trứng ) is anything but a clearer coffee with a mild taste. As it appears in the photo above, it is essentially a Cadbury Creme Egg with a hint of mocha. So the Vietnamese coffee recipe below isn’t the healthiest, but it’s most definitely a satisfying snack on a cold day.

If you find yourself in Hanoi and want to try the egg coffee above, it is from Cafe Giang , 39 Nguyen Huu Huan street, in the Old Quarter. And it was fabulous.

Now making the coffee at Cafe Giang is Nguyen Van Dao, whose father invented the drink in the mid 1900s when he worked at Hanoi’s Sofitel Legend Metropole hotel. Per a recent piece in The Guardian about the coffee ,

“at the time, milk was scarce in Vietnam so whisked egg yolk was used as a replacement. Other Hanoi cafes have attempted to imitate the drink, but the packed venue offering the authentic version is still the most popular spot in town for an egg coffee fix.

I can’t agree more about where to get it!

The recipe below was given to me by my host family, not Cafe Giang, and I’ve tried it many times. As noted below, I sometimes add almond extract for a bit of a different taste to the blend. Both are delicious.  Egg coffee for all!

Easy Vietnamese Egg Coffee (Cà Phê Trứng) Recipe

Ingredients for Vietnamese Egg Coffee / Cà Phê Trứng

  • 3 teaspoons of Vietnamese coffee powder (Vietnamese coffee is available on Amazon here)
  • 2 teaspoons of sweetened condensed milk
  • Boiling water
  • Brew a small cup of Vietnamese coffee. (Vietnamese coffee filters available on Amazon  here . Also, for visual step-by-step of the brew process, there is a good set of photos explaining  how to here .)
  • Crack an egg and separate the yolk from the whites. Discard the whites.
  • Put the yolk and the sweetened condensed milk in a small, deep bowl and whisk vigorously until you end up with a frothy, fluffy mixture like the one above.
  • Add a tablespoon of the brewed coffee and whisk it in.
  • In a clear coffee cup (we’re going for aesthetics here), pour in your brewed coffee, then add the fluffy egg mixture on top.
  • Presto. Egg coffee.

Notes on Egg Coffee and Where to Get It

Egg Coffee Hanoi

1.  A reader, Graham, has tried this at home and says another option is to add the yolk to the coffee with the sweet milk and whisk all together. The foam will then rise to the top.

2.  If you don’t want to make it with Vietnamese coffee, an alternative in the USA is Cafe du Monde’s coffee with chicory  from New Orleans. In an interview with Vietnamese-American author and chef Andrea Nguyen, she notes:

Well, when Vietnamese people came to the U.S. in the mid-’70s, many of them settled in New Orleans. Their coffee back home was intense and bitter; the chicory in Café du Monde really matched that flavour, so the people who started working there got a taste of this coffee and started telling others in the community. It was a really small, tight-knit community, so word traveled to all over country.

Readers have reported in that it’s delicious with the chicory blend.

Chicory root as a substitute for coffee

Per a 2021 piece from Gastro Obscura , we don’t know who historically had the bright idea of using chicory as a coffee substitute but we do know that coffee made with chicory first spread widely when Napoleon cut off British trade with much of Europe.

During that time, “Napoleon actively encouraged the drinking of chicory coffee, hoping that if France and its allies relied on local products, it would strangle the British economically.” Even when the trade routes opened up again, chicory stuck around — until even the mid-20th century.

These days, Café au Monde is known for its chicory brews but chicory root has made a comeback in other ways. People looking to cut out caffeine have sung its praises as “herbal coffee,” and it has a long history in traditional medicinal for a variety of uses for the relief of symptoms related to mild digestive disorders .

3.  A 2015 piece about Cafe Giang in Vice Magazine’s Munchies column gives a bit of background to the cafe, and references that the coffee also contains…cheese. This is different to the recipe above, so I wanted to paste here. It’s the first I’ve heard of it, but I thought I’d include it regardless.

Every day, Café Giang hums with blenders, all churning up eggs, cheese, condensed milk, sugar, and other secret ingredients. It’s the birthplace of Hanoi’s cà phê trứng , or egg coffee. And yes, that means the egg and cheese go in the coffee. Egg coffee has been a way of life and a livelihood for Tri Hoa Nguyen and his family since shortly after 1946, when Tri’s father Nguyen Giang founded Café Giang and invented the first cup of egg coffee. Because there was a shortage of fresh milk in Vietnam during the French War, most Vietnamese would line the bottom of the cup with condensed milk and pour the coffee on top, and that’s exactly how Vietnamese coffee is served today. But lacking milk, Nguyen whisked in egg as a substitute.

4. Egg coffee now found elsewhere in Vietnam, including HCMC/Saigon.

As the introduction notes, egg coffee began in the North of Vietnam, but due to its apparent tourist demand and Instagram-clout, you can now find it at many coffeeshops in the South and elsewhere. Ho Chi Minh City now offers heaps of “trứng” coffee options in the few short years since egg coffee’s deliciousness has exploded online. While it’s not the secret Café Giang recipe, it’ll tide you over in a pinch.

I’ve gotten some reader questions about whether this is a generally-consumed drink in Vietnamese households. During my years in Vietnam, it certainly was not. Vietnamese friends found the trend amusing, but delicious, and said that they did not drink it at home. The general cà phê sữa đá (Vietnamese iced coffee with sweetened condensed milk, literal translation is coffee milk ice) was far more normal in the home. Recipe for that, here .

Regardless, the trend seems here to stay, at least for the moment. As for where to find egg coffee in Saigon :

  • Nấp Sài Gòn – 3/5 Nguyen Van Thu, District 1 (spacious location, wood tables, beautifully decorated cafe with a lot of different drink options on their extensive menu, including egg coffee).
  • Loft 2 Café Café – 95 Pasteur, District 1 (more expensive cafe right in the heart of Q1)

5. Vietnamese egg coffee in North America and further afield? 

  • New Yorkers, you’re in luck: as of 2018 Hanoi House now sells egg coffee , a chance for you to try it in person without traveling oh-so-far. Sara Leveen, who co-founded Hanoi House alongside her partner Ben Lowell  notes  that, “like so many old recipes, it was created out of necessity.” They tried the coffee in Vietnam and it seems were as hooked as I was. Now it’s available for all “liquid tiramisu” lovers in the Tri-State area, in American-sized portions.
  • In Vancouver, British Columbia, Chi Modern Vietnamese Restaurant ‘s Chef Chi Le has introduced Western Canada to the Vietnamese-style egg coffee.
  • In Toronto, Ontario Coffee Dak Lak is known for their Vietnamese egg coffee. (So far, the only place in Toronto that I could find that served it.)
  • In Katy, Texas, BreakTime Tea Lounge & Banh Mi serves Vietnamese egg coffee alongside its namesake sandwiches, as well as spring rolls, kimchi fries, and more.

6. Don’t miss salt coffee either, a recipe that started in Hue over a decade ago.

Per Vietnam Coracle’s post on salt coffee (cà phê muối), this alternative brew is gaining steam in the country. Like egg coffee, which has also become popular abroad, you may find it closer to home one day soon. Per the post, initially popular in Hue, the owner took his cà phê muối to Ho Chi Minh City:

National newspaper VNExpress shared the story of 57-year-old Dương Thành Long, who found himself in debt when the pandemic forced him to close his first coffee shop. On his second attempt, he discovered salt coffee’s growing trend and decided to sell it from a mobile stall in Ho Chi Minh City. Within a few days, Mr Long’s sales grew dramatically, reaching almost 2,000 cups. In a short space of time, Mr Long’s worries about his financial security were superceded by how to deal with 22 city-wide locations operating under his brand name, Cà Phê Muối Chú Long(Uncle Long’s Salt Coffee).

Definitely something to try if you enjoy seeking out different types of drinks on your travels! You can find the original location at 10 Nguyễn Lương Bằng, and there’s a second one also in Hue at 142 Đặng Thái Thân. In HCMC, you can find it at Phê Muối Chú Long, located at 68 Nguyễn Huệ.

Use Those Leftover Egg Whites for Coffee Meringues

Given the egg coffee recipe calls for only yolks, you’ll have some egg whites left over. While there are many things to do with them, Legal Nomads reader Holly suggested meringues and they are actually what I usually use them for.

So I thought I’d include my recipe here too, short and (literally) sweet.

Ingredients for Vietnamese coffee meringues:

  • 2 large egg whites, warmed to room temperature (leave them out for 30 minutes to do this)
  • 1 teaspoon of Vietnamese coffee powder
  • 1/2 cup of sugar (granulated or superfine),
  • A dash of salt (I use Himalayan pink salt as I can’t tolerate iodine)

Directions for Vietnamese coffee meringues:

  • Preheat the oven to 275°F.
  • Line two baking sheets with parchment paper
  • In a large bowl, beat the egg whites with an electric beater until foamy — I use medium speed for this.
  • Add the salt, and beat for 1 minute more.
  • Add the Vietnamese coffee powder, and 1 tablespoon of the sugar at first, then slowly adding in the rest of the sugar until soft peaks form and the meringue is stiff.
  • If you have a piping bag with a star tip, pipe them onto the pans. Otherwise, a teaspoon will do: drop heaping teaspoons onto the pans.
  • Bake, turning once, until the meringues dry on the outside. While exact time depends on your oven, this is approximately two hours every time I’ve made them. I usually turn the pans around halfway through, around 1 hour in.
  • Once cooled, let the meringues cool for 1-2 hours. If you have a wire rack, you can transfer to it for cooling. Otherwise, you can leave the meringues inside the oven with the heat off.

While the Vietnamese egg coffee recipe is the one I tried on my travels and loved at first taste, there are other egg coffee recipes out there.

looks similar to kopi telur (egg coffee) and teh telur (egg tea) in indonesia and malaysia… we here also used the same ingredients… but the way we brew the coffee or tea is different… we brew it the same way we brew teh tarik and kopi tarik… using silk stocking… to prevent the dust from entering the drink….. u can easily get this drink in any restaurant in msia or indonesia that serves minangkabau foods…

I am Vietnamese. I never visited Ha Noi, but i try myself this Eggs coffee at my house. I use powder milk because my hubby dont drink suggar and use the juicer to whisks the eggs yolk. It is better foam and nicer. Let try new one by yourself.

It’s not just Vietnamese culture that drink the egg coffee. My Italian mother and father in laws start their day with an egg coffee every morning for the last 60years. So did my grand mother inlaw all her life. They swear by it as it keeps them full til lunch and the egg being a healthy alternative to breakfast full of sugar cereal. You will achieve a nice egg coffee with any instant coffee, or even a coffee machine shot is even better, egg yolk whisked with a teaspoon of raw sugar until creamy. Then pour hot milk or can even use boiled water from kettle if watching dairy. Haven’t tried it with evaporated milk but I am sure it would be nice but unnecessary as my husband and I drink it too in the morning, I like it how we make it as it is simple and tasty.

Not sure if you’re aware, but with the increase in popularity of Vietnamese street food (like the amazing baguettes called banh mi) in London has come the appearance of Vietnamese this iced coffee, made with condensed milk. If you haven’t tried it, please do – it’s great!

Just got back from Vietnam and had this at Cafe Pho Co as well as at Note Coffee, both in Hanoi. Cafe Pho Co was definitely better than Note Coffee’s version. I will definitely be trying your recipe in the near future. Was surprisingly more difficult to find in Ho Chi Minh. I did see one coffee shop that had it on its menu, but never had a chance to try it there. Thanks for sharing!

Hey! We just got back from Vietnam and had the excellent fortune of having the famed Egg Coffee at Giang’s. Was looking for a recipe for it and chanced upon your lovely detailed write-up. What I simply adored was the Egg and Rum Coffee and I’m not even a Rum drinker! We also sampled the Egg Beer and that was also an intriguing new taste. What a discovery this was! Totally going to try your recipe :)

As a Marine stationed in Da Nang, liaisoned with counterparts throughout the country. Met up with an Army Vietnamese language specialist in Saigon. He took me downtown to a French restaurant, where I had the BEST French dinner I have ever had – in my life. And the onion soup was to die for.

Scandinavians typically place a whole egg in a cheesecloth sack then put into the pot. The American cowboy cooks did it a little differently. (digression – all cookware / flatware / plates, etc.) – were metal (they couldn’t break). If you’ve never drunk coffee from a metal cup – you are in for a treat (that your lips will hate you for). Since they didn’t have filters, the egg did the trick for them.

Into a percolator type pot add the coffee grounds. Throw a whole egg in & mash thoroughly. Slowly add the water (pouring down the side), put on fire & let boil maybe 3 minutes.

The mass at the top, once the pot is removed from the fire, will quickly sink to the bottom, leaving clear delicious egg coffee. Truly a fine exceptional way to drink coffee.

just came back from Vietnam and had egg coffee. The girl who did the food walk with us was great. At the end of tour she made egg coffee for us. She put a little honey and rum in the mixture with the egg and milk and added a dusting of chocolate and cinnamon on top. It was wonderful,
