The peelings are removed using water splashes. They are then cut into smaller pieces and placed in water to turn brown. In a slicing machine, they are cut into 0.4 to 0.5 cm edgewise slices. Whenever there is a large delay in the subsequent steps of blanching, the slices are once more submerged in cold water to gradually cool down. To prevent oxidation, slices are then kept in water containing 0.05% potassium metabisulphite.

Slices are placed on trays at a rate of 4.88 kg to 7.30 kg per square meter of tray area and blanched in boiling water for around 3 to 5 minutes. The surplus water and fried inedible oil from the blanched chips are then removed using centrifugal hydro-extracting machinery at 180–240 °C for 3–4 minutes.

The fried potato wafers are next placed on a sieve to drain excess oil, allowed to cool, and other seasonings like salt are added before the balsamic mixture is sprayed on as required. Potato chips that have been cooled are then stacked, sealed, and quickly distributed throughout the market. The nitrogen gas in the packet will also be injected, packed, and weighed by the automated packaging process, to keep the chips crunchy for a long time.

The potato will be washed with cold water and send them for peeling

Peeling process is takes place with the help of a peeling machine or it can be done manually

After peeling the potato will cut into uniform slices around  1.7-1.85 mm  thick with the help of the  slicing machine , and the slices are immersed in cold water

Potato slices are kept in water with 0.05% potassium Meta bi-sulfate to avoid oxidation. Or to remove starch

After the slicing process, potatoes are blanched for 4 to 5 minutes in boiling water with the help of a  blanching machine .

They spread in the tray then the inconsistent/ non-uniform slices are separated from the batch and then the remaining slices are moved to frying.

Use of dryer and fryer:

The moisture content of the potato slices is removed using the spin dryer or hydro extractor, later the slices are being fried in a fryer at 1900 degree Celsius for 4 to 5 minutes

And then kept in the container to cool and to remove access oil from the fried potato chips

Fill with flavor:

Fried chips are cooled, Flavors are spread on the potato chips as per taste with the help of salting and flavoring drum

After done with all the processing method the potato chips are ready to packaging

With the help sealing machine potato chips are packed and then packed into the carton boxes for delivery to the clients and customers.

Usage of machinery:

The blanched chips are then subjected to a hydro-extracting machine (centrifugal) to remove the excess of water and fried at 1900°c for 3-4 minutes.

Slicing: After peeling off the potato, it will be cut into uniform slices depending on the size you want. By using the slicing machine, slices are then immersed in cold water. Potato slices are kept in water with 0.05% potassium Meta bi-sulphate to prevent oxidation or for removing starch.

Blanching: After the slicing process, with the help of a blanching machine, potatoes are blanched for around 4- 5 minutes in boiling water and then they are spread in the tray where the inconsistent/ non-uniform slices are separated from the batch and then the rest of slices are sent for frying.

Drying and frying: With the help of the spin-dryer or hydro extractor, the moisture content of the potato slices are absorbed. After which, the slices are fried using a fryer at a temperature of 1900 degrees Celsius for nearly 5 minutes and then are put in the container for cooling.

Flavouring: Once fried chips are cooled, flavours are sprinkled on the potato chips according to the taste using the salting and flavouring drum.

This is the last but the most important step. The potato chips are safely packed into a container or a plastic pouch using the sealing machine and then finally put into the carton boxes for transportation to the clients and customers.
