Process maps provide an overview of the sequence of all process activities and tasks involved in the creation of a product or in the delivery of a service (Heinrich, Henneberger, Leist and Zellner 2009). For managers and decision-makers, process maps provide a way for analyzing and assessing the service delivery process (Kubiak 2007). In relation, O’Donnell and O’Donnell (2008) noted that process maps helps managers and decision makers by placing interrelating systems into perspective and showing how each task, system, and team members relates in a manner that is easy to understand. This paper details the process map for providing services to customers in a typical restaurant. In addition, this paper discusses the layout used for the process.
Process Flow in the Restaurant
The process flow for the restaurant is shown in Figure 1. The process starts when customers enter the restaurant. Near the entrance is the temporary holding area where the receptionist gets the names of the customers. Afterwards, customers are directed to the waiting area where they will wait while the table is being prepared. Then, the receptionist directs the customers to their table. Once seated, the customers begin to review the menu and waits for the waiter for the placement of the order. The waiter then takes the order and afterwards confirms to the customers whether all orders were taken. When the customers confirm the order, the waiter then places the order on the order board, otherwise ask the customers to repeat the orders. The chef then takes the order and reviews it. If there are no clarifications to make, the chef proceeds to cooking the food, otherwise call the attention of the waiter to verify the orders. After cooking the food, the chef prepares the food and places it on the designated area and rings the bell to call the attention of the waiter. The waiter then picks up the prepared food and serves it to the customers. The customers then eat the food and subsequently ask for the check. After a certain period, the waiter arrives with the check. The customer then reviews the check. If there are no concerns, the customer pays the bill, otherwise verify the check to the waiter. After paying, the customer finally leaves the restaurant.
Analysis of the Process
Looking first at the elements of the process map, the red ovals in the process map represent the start and end of the process. The first red oval that is seen in the process map signals the start of the process, while the last red oval indicates the end of the process. The green rectangles on the other hand, represent operations or work activities. Consequently, there are about 12 green rectangles in the process map, which show vital activities or tasks. Meanwhile, the yellow diamonds signals a decision point, which involves inspection and counterchecking. In the process map for the restaurant, there are three diamonds, in which the waiter, the chef, and customers conduct inspection or counterchecking. Next, the purple triangles represent idle times or delay. In relation, there are five purple triangles, which signal idle times or waiting time throughout the process. Finally, the arrows represent movements or transportation.
Moving to the process time, each step in the process consumes a considerable amount of time. For example, it takes about 10 minutes before the customers are taken to their seats. Upon entry, the customers are held temporarily to allow the receptionist to get their names, which takes about five minutes. Afterwards, the customers are again held temporarily while the table is being prepared, which takes again another five minutes. Looking at the other stages in the process map, chef’s cooking time and the customers’ eating time tends to be longest processes. It takes the chef about twenty minutes to cook and prepare the food. Similarly, it takes the customers about 20 minutes to consume the food.
Value Stream Mapping
A closer look at the process would reveal that certain activities and operations in the process map may be categorized as either value adding or non-value-adding. The value stream includes value-adding activities that help in the creation of the product or the delivery of the service (Jones 2002). Non-value adding activities in particular, refers to certain activities such as transferring materials between two non-adjacent workstations and waiting for service, which generally lengthen the processing time, increase the costs, and in most cases, increase customer frustration (Collier and Evans 2007). In the process map for the restaurant, stages in the process such as the customer waiting to be seated, to place the order, and to get the check are all non-value adding activities, which lengthens the process time and trigger customer frustration. Consequently, these non-value adding activities constitute about twenty minutes of the process time. For managers seeking to streamline the process, the purpose is to eliminate non-value adding activities in the process flow. The value-adding and the non-value adding activities extracted from the process map may be shown as follows:

Layout Pattern for the Process
Generally, there are four major layout patterns in designing process: product layout, process layout, group layout, and the fixed position layout (Collier and Evans 2007). Consequently, the restaurant adopts the fixed position layout, whereby resources and people necessary to provide the service are situated in one physical location (Greasly 2009). For example, the chefs and the cooking equipments are situated in the kitchen where the food is cooked. Similarly, the receptionist is situated in the arrival area, as she/he is responsible for receiving the guest. According to Collier and Evans (2007), the fixed position layout is appropriate to service-providing firms, such as the restaurant. In this regard, the current layout pattern of the restaurant may be considered appropriate.
Process maps reflect the tasks and activities involved in creating a product or delivering a service. Managers and decision-makers in restaurants for example, could use process maps to analyze the service process and subsequently determine ways of improving the process flow. More particularly, managers could use value stream mapping to identify value adding as well as non-value adding activities. In the case of restaurants for example, activities presented as purple triangles in the process map, involve idle or waiting time. Consequently, these are non-value adding activities that prolong the process and at the same time trigger customer frustration. In process streamlining, managers seek to eliminate these activities. With regards to the layout pattern, the most commonly adopted layout pattern in service-providing firms is the fixed position layout, whereby resources and people necessary to provide the service are situated in one physical location.

Today, I will talk about my favorite restaurant that I visited one day and left an impression of calm and quietness as well as the quality of the food and it’s tasty taste.
Italian cuisine is one of the most famous kitchens around the world and is one of the most luxurious and characteristic cuisines in the world. It is the origin of pasta and pizza that is unparalleled anywhere else.
The Italian restaurant is undoubtedly one of the most outstanding and magnificent food establishments in my city. Characterized by the quiet atmosphere, its light-colored interior and its elegant, glamorous decor, it was once a cafe before turning into a restaurant with many qualities of the former.
The restaurant offers delicious dining options, with Italian authentic flavor. Waiters in the restaurant are friendly and respectful.
This place is no less than a typical example of how to build a restaurant.
The restaurant serves many famous Italian meals.
The chicken soup with cream is a great start to any meal, and I have not found a restaurant serving it as here. I prefer the Chicken Caesar Salad after it.
My favorite dishes are the fettuccine Alfredo pasta with chicken, grilled chicken with cream and mushroom sauce. I love pizza of all kinds. They are all delicious and different options. Parmesan cheese is a good choice to accompany any Italian dish.
Canoloni Agnolotti with garlic and rosemary is one of the best Italian dishes. Agnolotti is a stuffed pasta and is very similar to ravioli, served with some rosemary and garlic. This dish is one of the distinctive foods in Italian cuisine.
Rap Arancini broccoli with marinara sauce is one of the best Italian dishes. It is rice balls with well fried broccoli and characterized by its golden color and served with marinara sauce.
The restaurant also offers different types of juices with meals. Such as lemon juice with mint mixed with crushed ice is an effective recipe for extinguishing the heat of the atmosphere.
The restaurant at the weekend is busy … my advice is to arrive early or book or call for booking to ensure a place.
The restaurant is rated 4 stars and its prices are high.

My favorite restaurant for sure is one that specializes in chicken meals. The name of my favorite restaurant is “…?…”. It contains in the menu many recipes of chicken. I would prefer to order the Portuguese style chicken. So it contains a lot of hot spices. I prefer to choose the shape of the chicken and how to present it, whether it is with bones or boneless. Like a chicken burger or grilled chicken. Or other delicious recipes that I find very nice. I love to serve salads and appetizers first. Then serve the main meal in addition to some of the side dishes that I can add to the meal. All this is very nice to me.

Of course, I now have several different experiences from visiting restaurants, but my first restaurant remains the best, and returning to it makes me feel happiness that I often need it.

The atmosphere is welcoming and admirable. Out of all the different restaurants I visited in Peru, this one had the most beautiful climate and eye-catching scenery. When you enter you get aw-stuck by the amazing interior and beautiful environment. You start to feel all cozy and comfortable when you sit and look around.
The restaurant offers its customers a wide range of entertainment options. These include live bands, plays, clubbing, camping, etc. All these facilities enable the customers to explore the countryside. They do also offer accommodation services with a wide array of choices for couples, singles, and families. Their accommodation rooms are well-designed and provide a magnificent view of Mara hill.

Now we come to the most important section, which is none other than the food section. The restaurant offers a wide variety of delicious food items including fried rice, steak, different cuisines, Chinese & Italian food along with mouth-watering dessert and chicken dishes. The owner himself instructed the waiters to attend to each customer for the best quality.
They also had a small snack bar that I loved. From the snack bar, I ate Ceviche, one of the most popular snacks in Peru. It was chilly, sour, and lively at the same time. I never tried raw fish before that and was skeptical at first but when I finally tried it, it blew my mind away. I would love to try it again, even a million times more. Based on my experience of the food I tried in this restaurant, how it tasted, and how well it was presented I would recommend it to all of you reading my review.
Let’s now talk about the room service. It was also good but not great, it wasn’t great because the rooms were less clean and untidy. Whenever I ordered food it arrived late because the room service was not quick enough. Other than that, they came every time I prompted. They were really friendly, skilled, and dedicated individuals. Despite all that, they still need to work on the tidiness of the rooms and the time they take to deliver the food.
The pros and cons of the Restaurant:
Overall it was a great experience. If I were to score it on a scale of 1 to 10, I would give it a 9 or else a 4.5-star review.
The Pros of this Hotel
The atmosphere, the taste of food, outside view, meals, dining experience, and price of food were all amazing. In addition to this, the accommodation services offered by the restaurant at those prices were a blessing.
The Cons of this Hotel
As I also mentioned above, based on my experience, the restaurant had one downside and it was the room service. Other than that I was completely satisfied with all other services offered.
My Recommendation
Concisely, Papua restaurants deliver the best dining experience with exquisite flavors. I highly recommend going there and to experience it yourself. I am hopeful that everyone will enjoy all they offer and not just the food. I would love to visit again if I ever get a chance to travel to Peru.

1. Business lunch

Most restaurants and cafes offer an inexpensive business lunch menu from 12pm to 4pm. During these hours, you can dine for an average of 300-500 rubles (up to $8). The most expensive business lunch includes a salad, soup, main course, drink, and dessert. A cheaper option is usually a combination of soup or salad and a main course. The servings may be slightly smaller than when ordering the same dishes à la carte , but not massively so. Plus, lunch in a restaurant is a chance to try out dishes that would be too expensive for dinner.
2. Lunch in a canteen

Lunch in a canteen (similar to a business lunch) can be a little cheaper. Here you're unlikely to be offered the delights of French or Italian cuisine, and the interior will be simpler; instead, get ready for some time-honored Soviet dishes.
The most famous canteens in Moscow are located in the city center: Canteen N57 in the GUM department store on Red Square and Buffet N11 at Arbatskaya metro station. Don’t let the unappetizing names put you off.
3. Full menu discount

Another alternative to a business lunch is when restaurants give a 20-30% discount on all dishes on the menu. Such offers generally run from 12pm to 5pm.
4. Supermarket snack bars

Large and medium supermarket chains (Okey, Perekrestok, Vkus Vill, Azbuka vkusa) often have snack bars where shoppers can buy a portion of salad, soup, a second course, and a piece of cake by weight. 5. Closing time sales

A few hours before closing, many cafes and bakeries sell pastries and sandwiches left over from the day. At this time, you can pick up bread, desserts, and sometimes whole meals with up to 50% off.
